We infuse raw, unfiltered honey with hand-selected chai spices—cinnamon, cardamom, ginger, and cloves—allowing it to mature for 30 days. This deepens its natural caramel notes, creating a rich, spiced flavour. Each batch is harvested within 50km of Newcastle, ensuring a truly local and seasonal taste that changes with nature.
